The holidays are such a fun time to celebrate with friends and family and really reflect on all of the wonderful things you have in your life. It is also filled with tons of food, pies, wine and a day full of cooking! This is a simple, healthy recipe to help use up those holiday leftovers.

Thanksgiving leftovers salad

The best thing about this salad is that it is really versatile. Don’t have some of the ingredients? No problem, substitute them for what you do have!

Ingredients:

-Leftover Turkey
-Romaine and Spinach
-Fresh Cranberries
-Mixed Fruit (I like grapes and apples)
-Goat Cheese
-Mixed Nuts

Directions: Mix romaine and spinach in a big bowl. Cut leftover turkey into chunks and add to lettuce mix. Top with fresh cranberries (pomegranate seeds are a great substitute), goat cheese and mixed nuts.  Top with your favorite dressing!
