Healthy Lunch and Snack Ideas for People Working From Home

On our last post, “Foolproof Ways To Be More Productive At Working From Home“, we heard from a lot of you on our social channels that you want healthy lunch and snack ideas. One of the hardest parts about working from home is that we don’t always take the same brakes we would if we were working in an office and we don’t take the time to eat as we should. We have pulled together some go-to recipes for lunch and snacks that you can have on hand to make meal time while working from home easier.

Lunch ideas to prep or have on hand when you are working from home:

Chicken Avocado Roll-Ups:

First up are these delicious Chicken Avocado Roll-ups.  They are super simple and they don’t take long to make. You can pre-prep most of the ingredients making it a go-to though out the week while working from home.

Here are the ingredients you will need to have on hand:

  • 2 avocados, cubed
  • Juice of 1 lime
  • 2 c. Shredded chicken
  • 1 bell peppers, seeds and cores removed, chopped
  • 1/2 small red onion, chopped
  • 1/2 c. Shredded Monterey Jack
  • 1/2 c. shredded Cheddar
  • 2 tbsp. sour cream (Use plain greek yogurt as a healthy substitute)
  • 2 tbsp. finely chopped chives
  • 4 large flour tortillas

Honey Sesame Chicken Lunch Bowls

Prepping meals ahead of time is a great way to make sure you stay on track with your healthy eating while working from home! These Honey Sesame Chicken Lunch Bowls from Sweet Peas and Saffron are super tasty and you get four days of meals in less than 30 minutes!

Here is what you need for these delicious lunch bowls-

Honey Sesame Sauce:

  • ¼ cup chicken stock or water
  • ¼ cup soy sauce (reduced sodium)
  • ¼ cup honey
  • 1 tablespoon sesame oil
  • ½ teaspoon red pepper flakes
  • 1 teaspoon cornstarch
Chicken Lunch Bowls:
  • ¾ cup uncooked rice
  • 1 tablespoon olive oil
  • 3 cups broccoli, chopped into small pieces
  • 3 cups snap peas, cut into small pieces
  • 2 large chicken breasts, cut into small pieces
  • salt & pepper
  • red pepper flakes (optional)
  • sesame seeds (garnish)

Healthy Summer Mango Wrap!

These Healthy Mango Wraps from “What’s In Ellie’s Belly” on YouTube are a great light alternative to a typical sandwich. The wraps have an amazing fresh flavor, are easy to make and are perfect for a quick lunch when working from home.

Mango Wrap Ingredients  –
Lettuce
Mango – 3 (soft)
Black Beans
1 Can Taco Seasoning
Yellow Onion
Avocado – 2
Lime
Cilantro
Rice – Optional

Turkey Club Cups

A classic club sandwich is a go-to for a lot of people, but the stacks of bread can make you feel too full and ready for a nap instead of an afternoon full of working from home. These Turkey Club Cups from Delish.com are an easy finger food that is tasty and healthier.

Turkey Club Cup Ingredients:

  • 12 slices roasted deli turkey
  • 12 slices sharp cheddar
  • 1/4 c. mayonnaise
  • 2 tbsp. Dijon mustard
  • 1/2 head iceberg lettuce, shredded
  • 1 pt. cherry tomatoes, chopped
  • 1 avocado, chopped
  • 8 slices bacon, cooked and chopped

Simple Fruits and Veggie Prep:

There is no recipe needed for this one! Just wash and cut your fruits and veggies when you bring them home from the store. Store them in an air tight container to keep them fresh throughout the week. When you are working from home you will be happy you took the time to prep these so you will reach for them instead of the chips you bought for your kids school lunch.
